8 oz. almond paste 1/2 cup sifted confectioners sugar
1 egg white
1 cup finely chopped almonds


Place almond paste, sugar and egg white in a bowl. Mix dough together well until thoroughly blended.(Dough will be a bit sticky, so wash your hands before proceeding.) Pinch off tablespoons of dough and roll each piece into ball. Roll each ball in the chopped almonds and form a crescent. Place on a lightly greased cookie sheet and let stand 20 minutes. Preheat oven to 300 degrees. Bake cookies 20 to 25 minutes or until bottoms are lightly browned. Makes 2 dozen cookies.
