Ingredients

2 eggs, separated
1/3 cup sugar
1/4 cup rice flour, sifted
1 tsp lemon juice
Grated rind of 1/4 of lemon
Dash of salt

Directions

Preheat oven to 350F and line small loaf pan with wax paper. In bowl, sift rice flour, sugar, and salt together. Beat egg yolks until thick and lemon colored, add lemon juice and rind to egg yolks. Beat egg whites until stiff but not dry. Fold egg yolk mixture and flour mixture alternatively in small amounts into beaten egg whites with rubber spatula. Pour in to a small loaf pan lined with wax paper. Bake for 25 to 30 minutes. Cool.
