Salad ingredients

500g asparagus
1 red onion, sliced
500g potatoes
1T capers
2 eggs, hard boiled and chopped finely
1 red onion, slice and fried
150g feta, crumbled
Handful parsley

Dressing

50ml olive oil
20ml red wine vinegar
Lemon juice to taste
Salt and pepper

Directions

Fry the asparagus and red onion
Boil the potatoes then fry them and cut them
Make the vinaigrette by combining olive oil, red wine vinegar, lemon juice, salt & pepper
Arrange all ingredients on a platter and pour over the dressing
