Ingredients

2 1/2 cups applesauce
4 eggs
1 cup sugar
1/2 cup oil
1 1/2 cups rice flour
1/4 cup soy flour
1/4 cup cornstarch
1 tsp. salt
1 tsp. soda
2 tsp. baking powder
2 tsp. cinnamon

Directions

Preheat oven to 325 degrees F. Prepare muffin tins with gluten-free spray oil. Combine applesauce, eggs, sugar, and oil in a medium bowl. Sift dry ingredients together in a second bowl. Combine dry ingredients with wet ingredients, stirring until moistened.

Spoon batter evenly into 2 muffin pans.

Bake 15 minutes.

This recipe is gluten-free, milk-free, and nut-free. Contains eggs and soy.

Other pureed fruit or pumpkin may be substituted for applesauce.
