Ingredients2 1/2 cups applesauce4 eggs 1 cup sugar 1/2 cup oil 1 1/2 cups rice flour 1/4 cup soy flour 1/4 cup cornstarch 1 tsp. salt 1 tsp. soda 2 tsp. baking powder 2 tsp. cinnamon DirectionsPreheat oven to 325 degrees F. Prepare muffin tins with gluten-free spray oil. Combine applesauce, eggs, sugar, and oil in a medium bowl. Sift dry ingredients together in a second bowl.
