Ingredients

1 pkg (40 oz) Frozen Grilled Vegetables, larger veggies cut in bite-sized pieces
2 Tbsp Basting Oil
Salt and pepper to taste
1 pkg (16 oz) Gluten Free Fusilli, cooked per pkg directions (reserve 1 cup pasta water)
1 jar (6.7 oz) Italian Classics Basil Pesto
Zest of 1 lemon
1/4 cup Parmesan & Romano Fancy Shredded Cheese
3 Tbsp Basil, divided

You Need:2 baking sheets

Directions

Preheat oven to 400 degrees.
1.Toss veggies in large bowl with basting oil, season to taste with salt and pepper. Arrange in single layer on baking sheets.

2.Roast on separate racks 12 min. Switch rack positions of pans for even roasting. Continue roasting 5-10 min or until cooked through. Remove from oven.

3.Combine vegetables, pasta, basil pesto, reserved pasta water, and lemon zest in pan. Sprinkle each serving with shredded cheese and basil.
