Ingredients

2 tomatoes
2 zucchini cut into thick slices
2 capsicum, cut into small pieces
100g button mushrooms
4 skinned large boneless chicken breasts, cut into cubes
1/2 Lemon, juiced
1 tablespoon Olive Oil
2 tablespoons of chopped fresh coriander

Directions

preheat grill
boil large pan of water
add in capsicum, mushroom and zucchini
blanch for 2 minutes
drain well
thread chicken cubes and vegetables alternately onto 4 skewers
mix lemon juice with oil
preheat grill
cook kebabs for 12-15 minutes, basting with lemon juice mixture occasionally
sprinkle over the coriander and drizzle with olive oil before serving.
