1 egg
1 cup fresh grated apples
3/4 cup apple juice
2 tbsp. melted butter
1/2 cup bean flour
1/2 cup rice flour
1/2 cup cornmeal
2 tbsp sugar
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt


Thoroughly mix the dry ingredients together so the lumps are worked out.

Mix the wet ingredients in a separate bowl. Fold in the grated apples

Moderately mix both the wet and dry ingredients together, do not overmix, stirring untill entil the mixture is moisened..

Then pour the batter onto a greased griddle by the tablespoon to make your pancakes.Turn them when you see they they become slightly browned and the surface is bubbles and the edges are dry.

Serve immediatly. Top with fress butter and maple syrup.
