Ingredients

4 large potatoes
1/2 cup extra sharp parmesan, grated
1/4 tsp salt
pepper to taste
1/4 tsp paprika
tarragon or oregano or basil

Directions

Slice the potatoes very thinly - all the same thickness, so they will cook evenly. Arrange them one layer deep on a greased baking tray. Sprinkle lightly with the other ingredients. Bake at 400F until nice and brown, about 30 minutes, depending on how thinly the potatoes are sliced.
