12 oz vegetable stock
2 med white onions
1 tablespoon chopped garlic
1 table spoon chopped thyme
1 tablespoon water
1 tablespoon cornstarch
salt and white pepper


Julienne the white onion very thin and caramelize it in a medium sauce pan. It will seem like a lot of onion but it will cook down when it is caramelized. This is a slow process and the vegetarian gravy will taste burnt if you do it to fast. So cook over medium to medium low heat until the onions are a nice rich brown color. This adds flavor to the vegetarian gravy.

Add the chopped garlic and vegetable stock. Cook on medium high heat.

Mix the corn starch and water then add it to the gravy.

Let the mixture come to a boil and turn it down to a simmer. Let the vegetable stock simmer for 20 minutes. At the end it should coat a spoon.

Add the chopped thyme and season the vegetarian gravy to taste with salt and white pepper.
