Ingredients

1/2 cup oil
1 cup sugar
2 eggs beaten
3 ripe mashed bananas, mashed
2 cups gluten free flour
1 tsp. xanthan gum
1 tsp. baking soday
1/2 tsp baking powder
1/2 tsp salt
3 tbsp. milk
1/2 tsp vanilla
1/2 cups chopped nuts

Directions

Mix oil and sugar, add beaten eggs and mashed bananas: beat well. Sift and add flour, soda, baking powder, salt and xanthan gum. Stir in milk, vanilla and chopped nuts. Pour into greased loaf pans. Bake at 350 for 1 hour if making one loaf. Adjust temperature for smaller loaves made in multiples.
