Ingredients

1/4 c. butter
3 lg eggs
1/2 c. cornstarch
1/2 c. potato starch
3/4 tsp. xanthan gum
1 c. milk
1 garlic clove, minced
1 tsp. baking powder
12 oz. shredded GF monterey jack or cheddar cheese
4 c. chopped fresh spinach

Directions

Preheat oven to 350F. Melt the butter and place in the bottom of a 13x9" pan.

Beat the eggs. Add milk, corn starch, potato starch, xanthan gum, garlic, and baking powder, mixing well to remove lumps. Stir in the cheese and spinach. Pour into the 13x9" pan and bake at 350F for 30-35 minutes.

Remove from oven and allow to cool for 10 minutes before cutting/serving.
