Crispy and full of flavor, this easy-to-make, one-pan dish is a snap to throw together in a pinch.

Ingredients

1 1/2 pounds skin-on red potatoes, cubed
1 small red onion, coarsely chopped
4 strips of bacon, cut into 1/4" pieces
extra virgin olive oil
salt
pepper

Directions

Drizzle olive oil into the bottom of a roasting pan. Toss cubed red potatoes, chopped onions and bacon pieces together then place in baking pan. Sprinkle generously with salt and pepper. Drizzle more olive oil on top of veggies.

Bake at 425 degrees for 25 minutes. Turn one and return to oven for an additional 20 minutes or until potatoes are tender and crispy.
