8 ounces (2 sticks) unsalted butter

2 cups packed brown sugar

1 teaspoon sea salt

2 free-range organic eggs

2 teaspoons pure vanilla

2 1/2 cups white rice flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon xanthan gum

2 cups certified gluten-free oats

1 cup raisins or dried cranberries


Heat oven to 350 degrees.

Place unsalted butter, brown sugar and sea salt in a mixing bowl. Cream together for 2 minutes on medium high speed. Lower speed and add eggs, one at a time, and the vanilla. Scrape down sides of bowl with spatula.

Add flour, baking powder, baking soda and xanthan gum. Add gluten-free oats and raisins and mix on low for 1 minute. With a tablespoon, drop dough onto parchment-covered cookie sheet, leaving 2 inches between. Press down slightly.

Bake at 350 degrees for 5 minutes. Spin tray around and bake for an additional 5 minutes. Remove from oven and let cool on baking sheet -- centers will continue cooking as they cool. Store in an airtight container for up to 7 days or freeze up to 6 months
